Smoked pork shoulder in the Smoker. Process that usually lasts about 10 hours, although it is not an exact figure; We will work the piece at a constant temperature that allows it to be cooked with little aggressiveness, cooked with spices and our homemade 'Golden Sauce' (mustard barbecue, chilli peppers and many acid nuances. It is served 'a la plancha' with a brioche toast.

PULLED PORK

The king of the house and a beast of the sandwich, two slices of bread with butter, capturing the essence of the smokehouse. House pulled pork with golden bbq sauce, coleslaw, pickle, onion. A joy bomb!

LYDIAS'S TOAST

The best of the island, served with white rice, nachos, guacamole, jalapeños and sour cream.

CHILI CON CARNE

Smoked pork ribs in the Smoker. Process that usually lasts 6 hours although it is not an exact figure; at a constant temperature that allows for aggressive cooking, with a very light spicy touch provided by the pepper, which is why we say it is mild: The last hour of cooking is glazed with coffee barbecue sauce, also worked by hand. They are served out, 'a palitos' and the portion contains 4 large ribs or 5, if they were smaller. The product comes from Extremadura.

Totally insane, but definitely worth a try. If our fries and Nachos had a baby, this would be it. A rich and flavorful plate of French fries topped with chili c/ carne, picon de gallo, guacamole, melted cheddar cheese, jalapeños and of course... our homemade coffee barbecue sauce.
